I slept in this morning until about noon, and it was exactly what I needed. Hopefully this warded off the last little bit of that cold I had around for two weeks!
Luckily, I didn’t have a lot to do today, considering most of my morning was gone! My only errands were GNC, Michael’s, the grocery store, and laundry.
I scored a pretty awesome deal at GNC on Quest Bars. They were buy 3 get one free, so needless to say I bought six and got two free. They had every flavor I wanted: chocolate chip cookie dough, banana nut muffin, peanut butter supreme, chocolate brown, vanilla almond, and chocolate peanut butter.
I stopped at Michael’s after that for cellophane to wrap a big baby shower basket I put together for a shower tomorrow. Let me tell you, I had the hardest time with that stuff, and I was totally freaked out by the smell when I was hair drying it. Oy. Anyway – I had a super short list of groceries because I will be in Las Vegas for IHRSA all next week.
I LOVE Stop & Shop because they have the Scan It option. I usually just scan the items, add it to my reusable bags and then check out in way less time. Today, I downloaded the Scan It iPhone app and tried it out. It’s so convenient! You simply connect to their wi-fi and scan your shopper card to start the Scan It capabilities. Then, you just use your phone to scan the UPC.
You can also view offers (like the $.75 off hummus offer I took up), your total cart, and checkout under the “more” section”. You are also allowed to go through the 12 items or less line if you use Scan It and bag yourself. It doesn’t get any quicker than that! Unless, I guess, they allow to pay with your credit card on the app too – now that’s an idea!
I unpacked as soon as I got home and got started on the idea that popped into my head while shopping: lentil soup! I didn’t want to make anything crazy and have it go to waste next week. I had lentils already so I picked up this soup greens mix that was exactly what I needed!
I chopped everything up, including a sweet potato, and through it in a pot for an hour. The recipe is below!
While waiting for it to cook, I finished folding some laundry and put freshly cleaned sheets on the bed. This is always a task with Gus around because he thinks the sheets are some sort of monster that’s out to get him, so he attacks them.
About 50 minutes later, I spooned out a hefty amount of soup into a bowl and went to town, while blogging of course.
This totally hit the spot and was so easy!
Quick and Easy Lentil Soup
- 1 T olive oil
- 1 carrot, finely chopped,
- 1 small onion, finely chopped
- 1 celery stick, finely chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 2 sprigs thyme
- 4 cups low sodium vegetable broth + 1/4 more if it gets too thick while cooking
- 1 small sweet potato, finely chopped
- 1 heaping cup of green lentils
- salt and pepper to taste (I used about 1/2 t. each)
In a large pot, heat oil, carrots, onion, celery, and garlic until softened. Add bay leaf and thyme to the vegetables and cook for another minute. Add the remainder of the ingredients and bring to a boil. Let simmer for an hour, or until lentils are fully cooked and most of the liquid is absorbed. Serves 4 – or 2 hungry people!
