My Saturday was a list. I had a long list of things I wanted (and some needed) to get done. I know sometimes I let myself down by trying to accomplish too much at once, but I seemed to have more than enough energy to do it all!
So, let’s get started, in list format if you don’t mind!
Bootcamp
My day started with an express 30 minute bootcamp, where we actually focused on mobility and stretching. It was a nice change, but I still wanted more so I worked on my bag and legs afterwards and finished off on the stairmaster.
Breakast
I decided to try something new for breakfast. I followed Andie’s recipe for egg white whipped oatmeal subbing coconut oil instead of butter. I mixed toasted carob powder, pb2 and almond milk for the topping.
Coffee was a must. I’m not used to waking up before 7am on Saturdays!
Meal Prep
Next up was meal prep. I followed Jessica’s recipe for double bean burgers, except I used only adzuki beans and subbed whole wheat flour instead of breadcrumbs. Oh, you didn’t hear yesterday was tweak a recipe day?
I later filled up the sides with bok choy and zucchini.
Vet
Gussy was a trooper yesterday.
Joe and I took him for a checkup. He came in at a whopping 10.5 lbs and got his nails clipped. All’s good; except his whining meows in the car. Ohhh do I hate that.
On the way home, I returned a packed to UPS that I had been meaning to drop off all week.
Storage
Getting my stuff out of storage has been on my list for a long time. Like, 2.5 years long. When I moved in with Joe in October 2010, I put a lot of my stuff in storage, not really know what was going to happen. Time passed and I tried to sell it, but nothing ever came of it. Coincidentally, a friend from work was moving into a new apartment and needed basically everything I had in storage, so she bought it all from me!
Thankfully, it was quick. They had it all at the loading dock. I did take a few boxes of things that I had though. Which led me to this.
I opened the boxes and found some kitchen gadgets and house décor that were useful, so I ended up going on a cleaning spree. I cleaned the entire house, organized cabinets, packed up unneeded things, carried it all down to the basement. did 3 loads of laundry, organized the laundry room, cleaned Gus’s litter box, vacuumed (Gus must have thought the world was ending between this and the Vet), and threw away old food/medicine/random crap. It was GLORIOUS.
Did I mention I blogged, too?
Wow, what a day. I eventually got hungry (weird!?), so I heated up one of the adzuki bean burgers with cheddar and Chobani ketchup on an Ezekiel english muffin.
On the side, I sauteed mixed greens (kale, swiss chard, etc.) with coconut oil, ginger, garlic, and Bragg’s aminos.
Around 10pm, I finally relaxed. Gus was all over me since I’d been ignoring him during my cleaning spree. Sorry buddy!
Today is going to be WAY different. It’s all about fun and relaxation. We’re going to Joe’s niece’s birthday party, watching the superbowl, and eating delicious food. I can’t wait!

Ha! Our weekend days have flip flopped, and today I’m wishing I would have been at least a wee bit productive yesterday. Holy to-do list! PS – I’m so stoked you’re going to Blend!
