The bootcamp class that I started this week is usually only Tuesdays and Thursdays at 5am, but our instructor is awesome and offered us a bonus 7am Saturday express class (30 minutes). I really didn’t want to get out of bed this morning, especially since it’s 14 degrees and there is snow on the ground! But I dragged myself out around 6:45 and got to it.
We only used one light and one heavy dumbbell and got a total body workout in! We switched if we needed to for each exercise, but we focused on unilateral movements to really work on any imbalances. I was kind of worried when I showed up and saw nothing set up in the room. Only a handful of people actually showed up for the bonus class, but boy was I happy that I did!
It got me moving and I decided to keep going for another 30 minutes after class. I switched between sprints and incline walking, really watching my heart rate so that as soon as I dropped down to 65%, I would shoot up to 85% of my max.
I can already tell that this class is helping to increase my VO2 max. VO2 max is the maximum rate at which your body can consume oxygen while exercising or performing an activity, or your maximum aerobic capacity. Basically, it’s a measure of your cardiovascular endurance. If you train at a higher intensity level (HIIT is actually the best way to increase your VO2 max!), you will eventually increase your cardiovascular fitness and in return, be able to endure more and burn more calories. Make sense?
So there’s that. All this means to me is that I am going to be hungry all. day. long. So, let’s get right to breakfast. I can’t tell you much about it because it’s secret, but hopefully soon! It wasn’t perfect, but it was definitely a delicious stack of pancakes.

Before I got home, I actually stopped quickly at the grocery store. Let me tell you how awesome it is at 8am. No one was there! I got my Starbucks, picked up a few items, and was out in 15 minutes.
I started food prep right after breakfast because I am helping out at the restaurant tonight (hostess with the mostess) and want to make sure I get everything done before I have to leave. I baked a batch of egg muffins with mushrooms, greens, and peppers to have for the week. Apparently, Gus thought that I made them for him.

You really have been burning a lot of calories!! Gus is so cute, how can you not give him anything he wants?!!!
Yay for Saturday exercise classes! I’m really wanting to buy a heart rate monitor for workouts in order to get a more accurate calorie burn number, what kind is yours?

Sounds like a super Saturday! I’m drooling over both the pancakes (oh, hello, Barney Butter!) and the egg muffins. Two of my favorite breakfast-y foods!
