Chobani Dill Sauce & Murphy’s Law

Well, I was right. It was most definitely a ravenous day yesterday. And my thought is that I didn’t eat enough throughout the day because I was snacking like crazy when I got home.

Throughout the night, I dug into the hummus and lentil chips…twice, made myself salmon with vegetables, ate some more brownies, and took a few large sips of Joe’s protein shake when he got home. I ended up making a cup of green tea to try to stop myself from going back for more brownies!

Anyway, the important part is that 80% of what I ate was healthy, right?

I had Whole Foods wild caught sockeye salmon in the freezer that I had taken out to defrost for the week. I baked the salmon with chopped scallions, earth balance, lemon juice, and a spice mix with marjoram, rosemary and thyme.

I whisked together the following ingredients to make a sauce for the Salmon.

  • 1/2 cup plain 0% Chobani
  • 2 tsp. dried dill
  • a squirt of honey (okay I used agave nectar because my honey had hardened – why does this happen?)

This made enough for two pieces. The tangy taste in the greek yogurt was balanced out by the sweetness. You could definitely taste the dill but it was not over powering, so you can add more if you decide to make this.

Today

I have to admit I am a little sore after this week’s workouts so far. I decided that since I am waking up so early on Tuesday and Thursday for boot camp, I’m going to workout after work on Monday and Wednesday to allow myself to sleep a little later on those days.

On my lunch break, I had to get my car inspected. Yippee! (I hope you caught my sarcasm.)

I had a Murphy’s Law situation. Actually, it was pretty funny. I pulled up to the station and turned in thinking “wow, great, there’s no line”. The guy came to my window and asked me where I came from. I told him I just came from the highway. I had no idea what he was talking about. He then told me to look in my rear view mirror. Turns out, there was a huge line around the side of the building that I totally bypassed. Whoops! I thought he was going to be nice and just let me go (and I was surprised that a crazy New Jersey-an hadn’t already stepped out of their car to come punch me), but unfortunately I had to go all the way around, get a ticket, and go back through the line. After doing so, I ended having to wait outside for almost 30 minutes because the car in front of me had some issues and didn’t pass. My toes were numb by the time they were done – it was under 20 degrees today! I was just happy I passed; for some reason I was a little nervous that I wouldn’t. Hmm..I wonder why that thought crossed my mind?

Hello to culinary genius. I am definitely going to have to make some of that sauce to put on anything seafood related that comes out of my kitchen.
