Outdoor Run + Stuffed Chicken

On Sunday, I ran outside for the first time since I stopped training for my half marathon in August. Successfully, I had no knee pain afterwards. My friend Katy said she was going for a run in Hoboken and since it was beautiful outside and I knew that I wasn’t going to get a workout in on Monday, I politely invited myself along. She said we were only going to run 3 miles, but we ended up doing 3.5.

Not a bad pace at all! We ran along the Hudson River at one point and as we turned the corner, we had a perfect view of the Empire State Building. How cool, right? The small things…

Afterwards, we headed to Joe’s restaurant for brunch.

And I thoroughly enjoyed pumking on tap. Hands down, the best pumpkin beer out there.

Monday is my super early morning at the gym, so by 1:00pm, I already clocked in an 8 hour work day. I have no choice but to come home and nap if I want to be productive on days like that. After a two hour snooze fest, I went to the grocery store for the weekly haul. I had a few things on hand already but I bought additional necessities for some recipes I’ve been swooning.

My Mom sent me this recipe a while ago for stuffed chicken but she said she switched out some of the ingredients. I did the same as her and I used feta cheese instead of pepper jack, and I subbed simple salt and pepper for the cajun seasoning.

Okay, I didn’t have toothpicks so these random kabob sticks had to do. My chicken rolling skills obviously need work, too. I was also too lazy to cook the spinach before stuffing it. #fail

The chicken came out really good, mostly because the feta added the salty component to it. I served it along side roasted brussels sprouts.

I didn’t work out this morning because when I head into the gym today, I have time in between clients, so I figured I’d save it for then. I decided to enjoy a leisurely breakfast instead.

I scrambled two eggs with broccoli and feta with a side of berries and toast. I caved on cinnamon raisin Ezekiel bread at the grocery store yesterday. I haven’t bought bread in I can’t tell you how long. Not because I’m going paleo or anything, I just really haven’t been craving it. Sweet potatoes fulfill my carb cravings these days.

I’ve loved this bread since the first time I had it 5 years ago. I used to eat it with peanut butter every single morning for months! It’s just as good as a deli cinnamon raisin bagel, I swear!

As I ate breakfast, I cooked the chickpeas that I soaked last night.

I’m planning on roasting them based on a few recipes I’ve come across and then probably making hummus with the remainder. We shall see.

I hope you are all enjoying your week so far. My Monday flew by, which is a good sign!

I love Pumpking! I haven’t found it anywhere in Chicago yet- I am jealous!!!

Yay for a pain-free run!
And I just did the math for that 8 hour day. That is an EARLY one, girl!! A nap was needed indeed ;)

Haha… Well, he is! He doesn’t cook for the restaurant, but he’s made sauce a few times for me (he’s Italian), and it’s pretty darn good!
