Happy Fourth!

HAPPY 4TH OF JULY!

First of all, I want to thank all of you for the advice on my post about running my first half marathon. Secondly, thank you to everyone who left kind comments on my post yesterday announcing that I passed my personal training exam. I am beyond excited and have already began researching for my next move.

Today started off like any other Wednesday; with a workout and breakfast. I completed day 3 of my training which was a steady 3 miles. Unfortunately, the treadmill has been getting a lot of attention because I’m such a wuss in the heat.

I began by heating up kale in a pan with some olive oil. Eventually, I added 1 egg and 2 egg whites with a scoop of black beans and let it all cook together.

I served it with a brown rice cake topped with hummus and cucumber and a super mushy overripe peach. Whoops! I just bought it Monday but I guess this heat is just speeding up the process.

Alright, I haven’t had coffee yet today and I have a feeling if I don’t soon, it’s really going to hit me! I get headaches when I don’t have caffeine, but every time I try to wean off coffee, I give up! I know there are studies contradicting one another, but I usually only have 1 small cup a day. Everything in moderation, right?

Speaking of contradicting studies, I just started this book.

I received Drop Dead Healthy by A.J. Jacobs in my swag bag from fitblognyc and recently saw that Julie reviewed it for her book club. I decided to start reading something now that I’m not studying anymore! Similar to Julie, I did not expect to laugh while reading this book. He talks a lot of about contradicting studies of different foods but finds a way to make it all quite entertaining.

Anyway, back to that coffee! I hope you all have a safe and fun 4th of July!

Your kale and black bean egg scramble looks delicious! I have some kale I want to use up in the fridge — thanks for giving me a way to use it! :)

I’d like to read that book sometime. I remember seeing Jacobs on a random talk show (I think it was the Revolution?) and he seemed pretty damn hilarious.

Ohh I bet he was on the Revolution. I love that show! I was just watching it today actually – Harley Pasternak is one of my faves.

Bad things happen to me as well if I go not get my morning coffee. The headache will hit around noon and it is impossible to get rid of even if I take Tylenol. I will just keep drinking my coffee, thank you very much!!

I’ve been seeing that book everywhere! I really need to read it! It looks like it will be great! I love any book with nutrition information in it :) Hope you had a happy fourth too!

Loving that scramble girl! I just put a hold on that book in my library so hopefully I’ll get to reading it soon too. I need new reads before the 2nd Fifty Shades book becomes available for me (it’s on hold too, but I think it’s on hold for a lot of people, haha).

I have that book on my reading list to get started sometime soon. I’m excited to read it. I totally relate to the caffeine, without it I am a monster and just non functional. Its bad. I just love my coffee though!
