Mushy Meals

Last night, I had pizza and french fries for dinner. Yep! Turnip fries, which were roasted and seasoned with salt, pepper, garlic powder, and onion powder…


And cauliflower crust pizza, which I subbed 1% no salt added cottage cheese for the mozzarella cheese.


I’m thinking that wasn’t a good idea, because the edges burnt and then the middle was still mushy.


Regardless, the taste was still on! I made a quick tomato sauce by adding campari tomatoes, onion, garlic, basil, salt, and pepper to the food processor and then cooking it in a pan for 10 minutes. Other toppings included spinach and romano cheese. This is the only time it’s okay to say that I ate the whole pizza!

This Morning

Last night, Joe’s parents asked if I could drive them to the airport this morning. They have a condo in Florida and they are going down for the next 10 days. Lucky! I told them I would meet them at 5:45am to take them there. Joe and I ended up both getting up and had plans to go to the gym afterwards, but we were just so tired that we opted to come back home and get another hour of sleep. Well, an hour turned into 3! I think having interrupted sleep is what did it. Then, I had intended to go to yoga at 9:30, but that didn’t happen. It wasn’t even that I was tired, I just literally felt like my body was saying “noooo! please! rest day, rest day!”. Fine, body, you can have one.

I was starving when I woke up and I ran right to the kitchen to make Ashley’s banana cinnamon protein quick bake. I spotted it yesterday and had a feeling I’d be making it soon. This morning, was soon! Joe’s parents had a bunch of produce that was going back and since they left this morning, I scored 5 super ripe bananas! In the freezer they went (except for the half that I used here).


I subbed oats for the buckwheat and for some reason it took me almost 10 minutes to microwave! I kept putting it back in and it was still mushy. (What’s with me having mushy meals lately?) I ended up just eating it with a soft middle. It still tasted delicious!


I surrounded it with blackberries and topped it with crunchy almond butter and maple syrup.


Yum. Yum. Yum. Yum! I will be making this again!

I’m feeling better now so after some work and studying, I may try to get to a yoga class. We’ll see!

Whoa! 10 minutes?? What type of protein powder did you use? I made it again yesterday morning and it took about 2.5min for me. That is crazy! Sounds like there was too much liquid. Maybe your powder doesn’t absorb as much as mine. Sorry it was mushy, but glad it was still tasty!! :) I’ll make a note on the recipe, that the milk amount may vary. The batter should be very thick. Not pour-able at all. Thanks for posting about it!

I used SunWarrior vanilla. I made sure all the ingredients were spot on, too! I think it may either be the bowl I used, or my microwave. The ends cooked, but the middle was mushy. Either way, it still tasted amazing!! I did use 1/2 cup milk, so I will try 1/4 cup next time maybe! Thanks for the recipe! :)

I made the cauliflower crust pizza last week and loved it! Then a few days later, I tried to make the crust without the cheese and I got the soggy crust thing happening too…Guess it’s in there for a reason haha

Yea! I guess it is! lol I think I might try making it again with cottage cheese, but making smaller (like 4 inch) pies and maybe even browning the “discs” on a pan before baking them so that they crisp up! I’ll post about it if I do!
