It’s weird, even though my schedule has changed and I have more free time (more on that another time), I still feel like there aren’t enough hours in the day. I guess when you have the time, you take your time, and it just defeats the purpose. It’s 7:00 already and there are still some things I wanted to get done today. I guess I need to get that “9-6″ work day out of my head. Being able to actually take a lunch break and walk away your work area is a feeling I haven’t known for a while, so maybe I am just taking advantage of it and need to tack on some extra time at the end of the day to compensate.

Anyway, this morning started out with a nice sweat session at the gym. I got in about 4 miles on the treadmill with Joe running next to me, stealing my towel, throwing his water bottle at me and trying to distract me as usual. I just hit the big red button on his treadmill. That a show stopper! This really happens at the gym and everyone there probably thinks we are nuts, but we both laugh it off!

I needed something warm for breakfast. It was raining pouring out and it was just miserable. I needed something comforting.

A colorful bowl of oats did the trick. In the mix: 1/3 cup oats, 1 tbsp. flax meal, 3/4 cup almond milk, cinnamon, stevia, vanilla extract, pinch salt, and vanilla SunWarrior protein powder stirred in at the end.

I made it a little PBJ-ish by adding raspberries, blackberries, and a big scoop of Barney Butter crunchy almond butter. I love when it gets all melty!

I was full for a few hours, but took a quick break from working to snack on a pear (why does spell check not recognize pear and wants me to write pair?) topped with peanut butter drizzle (PB2 & almond milk), chia seeds, and unpictured cinnamon (oops!).

Even though I didn’t get everything done that I wanted to today, I was still productive.

  • worked
  • cleaned the shower
  • studied for IIN
  • studied for CPT
  • paid some bills and moved some finances around
  • tied up some loose ends on random things (insurance, etc)
  • made dinner
  • blog (right now!)

Oh, dinner! Yes. About that….

I baked a spaghetti squash earlier in the day so I’d have it ready. When I was hungry, I threw this together. I heated olive oil and garlic in a pan. Then I added white beans, basil, tomatoes, salt, pepper, and oregano. Once the mixture was all combined, I put in the spaghetti squash and let it all cook together. At the end I added baby spinach and put a lid on it until it wilted. I shredded lots of romano cheese into the mixture and finished it with more on top.

It was pretty awesome for a quick and easy dinner! I am notorious for these and unplanned dinners usually come out better than when I follow a recipe or stick to a plan!


I realize that my posts are so inconsistent. One day I post twice with my breakfast & workout and then dinner. Another day I post all of my meals in one. Another day I don’t post at all. I really won’t know what my schedule is going to look like yet and I hope that you guys don’t mind that I’ve been all over the place. What do you like best? More posts? One big long post? Workouts? Meal pictures? Recipes? None of it? :)

I am happy to read your blog anyway you want to do it. I find that now that I am not on a 9-5 work schedule, I don’t get as much done around the house. I used to have a Saturdaty routine to get everything done, but now I always tell myself I can do it tomorrow, and that doesn’t always happen!

I think whatever works for you and your life is good. You have a great blog….I just subscribed to it. Keep it up! How is the IIN course going? I am thinking I am going to start it either March or April….I am meeting with a local graduate of IIN next wednesday…I am really excited to talk to him about running his own business and so much more. I hope you studies are treating you well. I will keep you posted if I start the course!

that spaghetti squash dish looks SO good!! i usually just use spaghetti squash with marinara or meat sauce, so i think it’s about time i mix it up a bit and do something like you made. yum!

Well, I started in September and ended up having to put it off, long story! But, I started again this month and so far, it’s coming along! I am doing it through ACSM. It seems really tough, but I’m doing the notecard thing and just trying to get it something every day! How about you? You should be testing soon, right?? Good luck! :)
