Ebay Finds

Lunch and dinner came pretty easy today in the midst of all of my errands and studying.

After my boring breakfast this morning, I knew I should have had eggs. Good thing eggs work for lunch, too! I toasted some crusty wheat bread from last week’s soup, topped it with spinach and tomatoes, and baked it for a few minutes at 350 degrees. While it was baking, I made an over easy egg seasoned with truffle salt and pepper. Unfortunately, I overcooked it a little so the yolk wasn’t as runny as I’d hoped, but still tasty. I shredded pecorino romano on top.

I worked a bit, ran the errands I had intended to do, plus some more, and studied. I was quite hungry by the time I was done and knew that I needed something nutritious but quick. Brown rice and canned beans are always a go-to! I basically followed Chelsey’s recipe and substituted brown rice for the quinoa, white beans for the chickpeas, and spinach for the kale.

If you use nutritional yeast the right way, it can really make a satisfying “cheesy” meal!

The greens were hiding underneath. Thankfully, I had lots of leftovers for tomorrow!

Mealwhile, I was browsing the internet for deals on Windows 7. I bought Parallels a few months ago to run Windows Live Writer on my Mac, and never got the license. Until today, I didn’t realize that it’s $200! I almost choked when I got to the register at Staples. “No thank you!”. I knew I could find it online somewhere for cheaper. Well, Amazon didn’t have the full version (not upgrade) for a deal, but Ebay did! I also ended up purchasing MS Office for Mac 2011 on discount too! I got both for $100 each. Office is normally about $150, so I was pretty psyched.

Speaking of Ebay, I am going to sell a few things myself! That is, unless you guys happen to be interested in any of these items!
