I can’t believe Saturday is almost over. Heck, October is almost over! Time is flying by!
I had mentioned in my October goals that I wanted to run the Brooklyn Rock n Roll 10K today. I never signed up and quite honestly put it off knowing that it was a really far trek for me, especially having to leave at 4:30 in the morning. I have been loving running lately and I am kind of bummed that I didn’t do it, but I did accomplish a bit more than 6.2 miles on my own today!
I did the same thing as last Saturday, hoped for the best, and felt amazing the whole time.
After the gym, Joe and I had a quick breakfast, showered, and both headed out. He went to work, I went to the grocery store. For some reason I just love going grocery shopping. There is something so relaxing about it. I grab a Starbucks coffee (since there is one inside my grocery store), grab one of those hand-held scanners so it’s easier at checkout, set up my reusable bags in my cart, grab my coupons and list and set out to shop!
I know a lot of people like to be in and out, but I enjoy walking up and down the aisles. I take my time, find the best prices, read labels, and check out new products.
I’ve been using coupons that I still have from the Healthy Living Summit, plus some others that I get sent in the mail from my grocery store.
It’s been $5 off every week plus another sweet coupon. Today’s was free butter, which always comes in handy on my weekend bake-scipades.
It’s seriously like a game, I try to save as much as possible.
Check that out! My YTD savings excite me way too much. I saved $28.63 today and only spent $78.10. Anything under $100 is usually decent, as Joe and I are both bottomless pits. I also try to stock up on anything that is non-perishable that’s on sale. Like… $1 bags of brown rice cakes! Yes!
I also save 5 cents per bag for bringing my own. Hey, every penny counts! After putting everything away I got to work on some meals and prepping for next week.
First up, Mama Pea’s pumpkin protein bars subbing applesauce for the silk tofu.
This was my first Mama Pea recipe and let me tell you, these were spot on. I guess I need to get on that mmmm sauce. Anyway, I dug right in. These are great for a quick pre-workout snack, or after of course!
Next up was roasting some veggies including the acorn squash I bought.
Acorn squash is so sweet, I love it! I kept half for stuffing and used the other half in a quinoa risotto that I made. Recipe will come soon, I promise!
While everything was cooking, I enjoyed lunch that consisted of escarole soup from Joe’s mom and a brown rice cake with edamame hummus.
I was really in the mood to just lay down and relax but I knew that I had a big task that I wanted to complete for the last two weeks and haven’t gotten around to it. I needed to organize and clean out our office. Once I start though, I can’t stop! So, it all worked out. Plus, I needed to make room for all the crap on the dining toom table that was not fitting anywhere prior to my organizing.
It felt so good to finish! One more check on my October goals.
And yes, that is a bowl of quinoa risotto on the desk. Ssshhh!!
A couple things about this photo:
- Confession: I still need to go through the bookshelf as it clearly needs help. We acquire lots of stuffies, somehow.
- Yes, the walls are green and the curtains are purple. When I moved in with Joe, this was the decor so I stuck with it.
- I am selling my PC after all that (I know, I am crazy, but I am truly a Mac girl), and thats why those boxes are there for when I finally transfer everything off of it back to my Mac.
PHEW! I know weekends are for “me time” and relaxing, but honestly, I love to feel productive. Work takes time away from me being able to do all of this, and it’s all actually a stress reliever for me. Plus, Sunday is mine and Joe’s day to just be bums, which is why I can’t wait for tomorrow.
But now, I’m off to have dessert: apple cider donuts. I couldn’t pass those off when I walked by the bakery section!
