I loved being back at bootcamp this morning! I needed some serious strength training after taking a few days off last week. After class, I finished up with a 25 minute incline interval session on the treadmill.
This is the last week for bootcamp, but next week is another demo week before they run the program again. I can go to the demo classes, but I’m not sure if I can justify another $150 for it, especially because I have some other exciting things going on that I’ll update you guys on soon! I think it will be good to switch it up though. I’ll go back to my own strength training and maybe sign up again later in the year.
Breakfast, coffee, and mid-morning snack followed after, but I was much more excited for lunch today! I prepped this simple recipe over the weekend to pack up quickly for work week lunch. It’s a great alternative to tuna salad!
Chickpea Smash Salad
1 15 oz. can chickpeas
2 tbsp. thinly chopped celery
1 tbsp. chopped onion
1 tbsp. finely chopped fresh parsley
juice and zest from 1/2 a lemon
black pepper to taste
a few pinches of salt
1 tbsp olive oil or more if preferred
Combine everything but the olive oil. Mash it up with a potato masher or muddler enough so that it’s combined but not hummus consistency. Leave some chickpea chunks. Add the olive oil and mix.
It would be great served on a thick, toasted whole grain bread. But whole wheat goldfish sandwich thins work too.
It would be perfect over some fresh greens as well, which is probably lunch for another day this week!
I added some goat cheese to my sandwich and paired it with a side of roasted veggies (brussels, butternut squash, sweet potato, and carrots) that I prepped this weekend as well.
I also had a peice of Kugel, which is a jewish casserole dish. My friend at work brought in leftovers from the recent holiday. I’ve never tried it before, but it’s really good! It almost tastes like apple pie, but it’s made with egg noodles, cottage cheese, cinnamon, and some other ingredients. Apparently there are many ways to make it.
