Easy Tuna Bulgur Casserole

I was craving something other than a smoothie tonight for dinner. Considering that cake was basically my lunch today, I wanted to get my nutrients in for the day.

I always try to use things up that have been around the kitchen for a while, so I spotted a few items and got an idea. I always have bulgur on hand, so I knew I wanted to use that as my whole grain. I love bulgur because it cooks so quick. It’s my brown rice, since I’m usually strapped for time. I had some leftover peppers for my veggies and Laughing Cow cheese from my Turkey Burger Helper that I decided to use as well. I needed a protein and tuna in a can was the easiest option.


Tuna Bulgur Casserole  *serves one



Place water over high heat until it comes to a boil. Turn it down to medium and add bulgur wheat. Let simmer, stirring occasionally for about 15 minutes, or until softened. Add peppers when bulgur is almost done so that they cook slightly. Add in tuna and olive and mix it up. Finally, add the cheese wedge and remove from heat. You may need to mush it around with a fork so it spreads throughout.

This was super easy and really good! I was actually kind of unsure about how it would come out, but it was tasty. I didn’t even need to add s & p, I think because of the cheese. I served it alongside some strawberries and the last peach in the house topped with chia seeds for crunch and extra nutrients.


Dinner hit the spot!


Now I’m off to finish up some laundry and relax. Tomorrow is Friday!! :)
