Ever since I read Janeetha’s tasty, healthy, creamy pasta post, I couldn’t get her healthy cream sauce alternative out of my head. I attempted a remake before when I was craving the chicken, asparagus, and tomatoes combo, but this time it’s really the sauce!
I used to love hamburger helper when I was younger and this reminded me of it in some odd way. Don’t laugh at the name!
Turkey Burger Healther (adapted from Janeetha)
- 1 lb. lean ground turkey
- 1 package baby bella mushrooms
- 1 red bell pepper, chopped
- 2 tbsp. olive oil
- 1 package Carba Nada pasta (or any kind you like)
- 15 oz. water
- 1/2 cup nutritional yeast
- 4 wedges laughing cow light queso fresco & chipotle
- 1 cup blended cottage cheese (I use 1% no salt added)
- 2 tsp. dry basil
- 2 tsp. dry oregano
- 1/2 tsp garlic powder
- (truffle) salt & pepper to taste
- xanath gum (I just kept adding until it was the thickness I wanted)
Cook pasta according to package directions. Set aside. Brown turkey meat until there is no pink left. Drain. Saute mushrooms and pepper in olive oil until soft or to your liking. Set aside with pasta and turkey in bowl. Add water, blended cottage cheese (I used my Vitamix and added some water to “get things moving”), nutritional yeast, and 4 laughing cow wedges into a pot. Whisk together over low heat. Since I subbed water for chicken broth because I didn’t have it, the sauce did not reduce down. I added the spices (basil, oregano, garlic, s & p) after about 10 minutes. Lastly, I added in the xanath gum until it was my desired creaminess. Add the sauce into the turkey, pasta, & veggie mix and stir it up! Serve and enjoy!
I taste tested this Saturday when I made it and then portioned it out to take to work for lunch this week.
