Since I bought Justin’s chocolate peanut butter yesterday, I’ve been on a craze! Last night, I told you guys I was going to test out a new dessert. I discovered faux ice-cream from Chocolate Covered Katie and decided to give it a try.
I mixed the almond milk, dark cocoa, vanilla, dash salt, and stevia and froze it in an ice cube tray.
After a few hours I pulled it out and blended it up in the Vitamix. It was a bit icy rather than creamy, but with all of my toppings, it definitely satisfied my sweet tooth.
I used truwhip, sprinkles (obviously my grocery store was trying to clear out the remainder of their 4th of July baked goods), banana, Justin’s choco PB, and an awesome new Reese’s product I swiped up yesterday- CRUNCHY!
I was sufficiently full and couldn’t help but fall asleep before midnight. Yes, that was my exciting Saturday night.
This morning, my body decided that 6am was an okay wake up time. I was not happy. My alarm was set for 7:30 to goto the beach, but for some reason I could not get that extra hour and a half. Plus, my tummy was rumbling so I decided to get up, make what I was craving, and bust out an early morning blog post.
Yesterday, when I was at the grocery store they were giving out samples of Kashi’s Dark Chocolate Coconut granola bars. I immediately tried it and picked up a box. I recently started reading Bess Be Fit and saw an oatmeal dish she made with one these bars. I love how we have the same affection for oatmeal and crazy toppings! I knew I’d be trying this for breakfast soon.
I whipped up some oats first.
- 1/2 cup oats
- 1 cup almond milk
- a lot of chia seeds, I didn’t measure
- a dash of salt
- a little vanilla extract
- 1/2 banana
- 1 tbsp. honey
- tbsp. unsweetened coconut flakes
I topped it with Justin’s choco PB, the Kashi bar all chopped up, and some extra honey.
I almost forgot the extra coconut flakes, which would have been a sad sad story.
Now that is cocoanut oats! I also made some french press coffee and poured myself a glass of OJ!
A super filling breakfast for me! PS. I love my new flower bowl. Julie has one and when I saw it at TJMaxx last week for $2.99 I couldn’t help myself.
Now I am off to the beach for the day! 8)
